Kurobuta |
Only the choicest, most tender and flavourful premium grade pork loin is used. It is well known for finer fat marbling and shorter muscle fiber which make the pork tender but not greasy. |

Homemade Breadcrumbs |
The kurobuta is coated with a batter made of breadcrumbs and reduced sugar before being deep-fried. This batter ensures the tenderness of the pork. |

Premium Oil |
100% healthy cottonseed and transfat-free oil is used to deep-fry the kurobuta. This oil creates a crispy and light coating for the fillets. |

Homemade Tonkatsu Sauce |
Originated in 1927, this sauce is a sweet blend of spices, apples and vegetables. Its smooth yet rich taste is unique to Ginza Bairin. No other restaurant can duplicate such remarkable flavour. |
